vanilla shortbread cookies

The other day, I decided to make more macarons. It was a warm, humid and rainy day. Not a good thing for egg whites or hair.  They came out tasting good, but the looked like vanilla wafers. These cookies you can make almost instantly. Really. One bowl, too.

You know how much I love things that don’t make a lot of dishes. I think it has something to do with no dishwasher… and avoiding dishpan hands. Man, those commercials for Palmolive must have scarred me as a kid. You don’t see too many dish detergent ads anymore. Not like the old days. Holy crap- I am reffering to wen I was a kid as old days. Well… it seems like it- mainly because of all the “stuff” that has come out since then. Cable, cordless phones, CDs, microwaves, to  cell phones, computers and Ipods.  There’s more, but then I will really start to feel like a little hunched over old lady. Which, I am not… and I will be in denial when I am.

So there.

Back to cookies. Mother’s Day is tomorrow. If you want to really make your mama happy, whip up these and go to the dollar store and buy some crayons and construction paper. And, channel your inner 5 year old and make her a card. I bet she will love it.  And, come on… admit it. New crayons are still fun. Even if your 36.

I cut these with a cutter and poked them with a fork.

You can do the classic wedges if you want.

They get a little bigger when they bake, see?

Mmm, they’re good with milk… or with a bit of jam on them. Hey! Another gift idea! Make a basket of these with some tea and jam. Oh yes- your mom will love that. 🙂

Serves: 12
Ingredients
  • 2/3 c softened salted butter
  • 2 c flour
  • 1/2 c sugar
  • 1/4 tsp salt
  • 1 tsp vanilla
Instructions
  1. Sooo easy:Preheat oven to 350.
  2. Combine everything in a bowl to form a dough.
  3. Pat out 3/4 ” thick and cut into wedges or circles.
  4. Place on a parchment lined baking sheet.
  5. Prick gently with a fork.
  6. Bake at 350 for 12-15 minutes.
