These are cozy in food form.
Ground beef simmered in spicy salsa and cheese, and covered in a soft pillow of sweet corn bread.
And, really- these are “weeknight easy”
Simply ground 1 lb of ground beef,
Top with salsa (you can simmer it with the salsa, too)
Add cheese and top with cornbread batter :
Bake in a 400F oven for about 15 minutes.
It’s that easy.

Southwestern Pot Pie
Ingredients
- 1 lb ground beef
- 1 cup Desert Pepper salsa
- 2 cups prepared cornbread mix (unbaked)
- 1 cup shredded cheese
Instructions
- Brown and drain the ground beef, add salsa
- Place into the bottom of individual ramekins or casserole (8x8) or (9x9) dish
- Top with additional salsa if desired, or pinto beans
- Top with shredded cheese (cheddar or cheddar blend)
- Pour over prepared cornbread batter
- Bake in a preheated 400 oven for 15 minutes for individual ramekins, or 25 minutes for casserole dish
