double chocolate potato chip cookies

so, call it PMS or a weird craving… but, I thought that potato chips would be a nice change in chocolate-chocolate chip cookies. You know, the salty-sweetness-gooeyness-chewiness? With a little crunch….YUM.

This recipe makes about 36 small cookies- I like that because I like to be able to make new things, but I only make a new dessert if the “old” one is gone. Sometimes, it’s not good to have a big ol’ cake hanging around for a week, either.

another nice thing? These don’t call for a ton of ingredients. That means= YAY! no trip to the store. I have a

love/hate thing with stores. I love to go buy food for new recipes…I just hate having to pay for it. (but, I always  do!)

Preheat oven to 375

In a bowl, fluff:

1/2 c light brown sugar

1/4 c butter, softened

add:

1 tsp vanilla

1 egg withe

Sift together:

3 tbs cocoa

1 c flour

1/2 tsp baking soda

1/4 tsp salt

Combine with the butter mixture, now fold in:

1/2 c chocolate chips

1/2 cup crushed wavy potato chips

Drop by small spoons (teaspoons) onto a baking sheet. Sprinkle with a few more crushed potato chips, and bake for EXACTLY 8 minutes. They may seem soft, but they continue to bake after they are out of the oven- so it’s okay. 🙂
