Rustic tomato bacon tart

You guys… this is waaaaaay easier than omelets. It’s almost as easy as scrambled eggs; but: it’s not as easy as toast. Or cereal. this was one of those midnight recipes that came to me out of the woods… or blue? I forget… hmmm just a question…

Anyway: if you want a stunning yet easy breakfast to get you bonus points in the home chef department- this is it! read on for some more

And… I even have some step by step pics for you. Are you ready for it?

I know some recipes all too well can seem much harder without pictures, and- because I care- look at what you made me do; just for you!

Start with a basic pie crust pressed into a tart pan.

I have these awesome pie weights; but dried beans will do. The reason you do this is to keep the crust from puffing up, and being uneven. bake for about 10-12 minutes at 350.

Remove from oven, remove the weights or beans and line with mozzarella cheese.

Ahhh look at the red in those tomatoes! I think there’s like, 22 slices in there… but I didn’t count.

Pour over the tomatoes: mixture of spices, egg and cream.

Top with more cheese and crumbled bacon.

Bake it for 25 minutes or so… and enjoy my dear reader.

Please let me know if there’s a glitch anywhere- I’ve been doing some technical work on the back end so there’s not so much blank space on the site.

Enjoy!
