You guys… this is waaaaaay easier than omelets. It’s almost as easy as scrambled eggs; but: it’s not as easy as toast. Or cereal. this was one of those midnight recipes that came to me out of the woods… or blue? I forget… hmmm just a question…

I know some recipes all too well can seem much harder without pictures, and- because I care- look at what you made me do; just for you!
Start with a basic pie crust pressed into a tart pan.
I have these awesome pie weights; but dried beans will do. The reason you do this is to keep the crust from puffing up, and being uneven. bake for about 10-12 minutes at 350.
Remove from oven, remove the weights or beans and line with mozzarella cheese.
Ahhh look at the red in those tomatoes! I think there’s like, 22 slices in there… but I didn’t count.
Pour over the tomatoes: mixture of spices, egg and cream.
Top with more cheese and crumbled bacon.
Bake it for 25 minutes or so… and enjoy my dear reader.
