hash brown muffins~ get all your breakfast favorites in muffin form
I have to admit… I have been slacking here lately. ‘Tis the season for cookie-making, craft-making, present-buying, fingerprinting and drug testing! Whhaaaat?
Yep, I had to go get fingerprinted and it was really cool. Did you know that they don’t use ink anymore? Well, I didn’t! It’s been awhile, I guess. It’s all computer and laser. My drug test is today… so I don’t have any cool stories about that. Maybe tomorrow.
I’m hoping to teach some cooking classes to kids. How cool?! 🙂 That’s the reason for the screening. And the fingerprints. We’ll see what happens in the new year. Speaking of all this stuff going on… how are you doing? I’m in the craft/cookie/candy phase. It’s triple c week here, because it’s the one time of year I can buy sugar at Costco and actually use it all.

….and two others, but I am having trouble deciding. Hmmm.
So… I whipped these up the other morning, because I was feeling like smelling bacon in the house. Sometimes, I want my house to smell like bacon. They ought to make bacon air fresheners. Why not? They make cookie scented ones.
I’ll settle for cooking up some bacon now. When I was a kid, maybe 5 or 6.. my favorite commercial was for Ejoli perfume. Some blond lady in high heels would sing.. “I can bring home the bacon! Fry it up in a pan!” All I wanted for Christmas was a Fisher-Price Baby Ann doll and Ejoli perfume.
So… I just found this commercial on You Tube. WHOA.
Are you speechless? The 8 hour perfume for the 24 hour woman. Does she sleep? Seems like she works, cooks, and takes good care of her man. Then, on occasion he will cook. Hmmm, but she’s bringing home the bacon.
Glad I had no clue what she was talking about then.
Back to my bacon:
Cook up 4 slices of bacon.
Mix it with some refrigerated hash browns I used simply potatoes, which are awesome, by the way!!! I have another recipe using their mashed potatoes- that will be up soon as well.
Add eggs, milk, cheese, and some seasonings. Bake em up and go spray on some perfume. Unless you want to smell like bacon. 😉

- 16 ounces hash brown potatoes
- 4 eggs
- 4 slices bacon, cooked crisp and crumbled
- 1/4 cup evaporated milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon onion powder
- 1 cup shredded cheddar cheese, divided
- Place the bacon, hash browns, milk, eggs, seasonings and 1/2 cup of the cheese in a bowl, mix well.
- Divide mixture into 12 well greased muffin tins and top with the remaining cheese.
- Bake at 375 for 20 minutes.
