Mmmm… lime. Mmmm…coconut.
Add some white chocolate and you have a tasty little melt in your mouth morsel.
Now, it turns out when I made these- I found out my kids and hubby don’t care for coconut. ( Insert happy-mama dance!) So now they’re mine, all mine! Muhahahaaa! (Insert lighting bolts and thunder sound effect)
Of course, I omitted the coconut for some of them & rolled them in graham cracker crumbs. You can do that, too. 😉
Anyway, before I continue on to a recipe I figured I’d fill you in on life in Florida. We got “some” rain from Issac over the weekend, so we were confined to watch it from our garage. My youngest daughter was practicing her “rain-stopping-super-powers” . (They didn’t work.) So far, the rainfall was at 13″. Not including the extra 12″ overnight…
However, there were moments where it stopped pouring and was just “spitting”, so the kids ( including the husband kid) released some energy.
Finally the rain stopped long enough for me to go outside to take a pic of our brand new river. 😉
We were very fortunate to not lose power for very long, and to only get water in our garage. The girls’ school has been canceled for two days (so far) which is nothing compared to the week it was canceled after hurricane Wilma. I’m revising my hurricane/storm kit to include sandbags and more craft items. I need about 72 hours worth of craft projects, at least. And, a canoe.
I started to catch toads with my youngest, but then I slipped and fell flat on my boo-tay. Ouch. I’m still feeling that one.
I’m thinking I might stick some seeds in the ground today.
At least I won’t have to worry about watering them in. 🙂

Would you believe I took this pic during the storm?! Doesn’t it look all bright n sunny? Crazy. And, no… I don’t have photoshop or any of that stuff. (Sometimes, I wish I did…)
I think it’s the lime in the pic that makes it sunny-looking. Limes and lemons are total sunny fruits, if you know what I mean. They’re happy. Apples? They’re yummy… but I associate them with witches and doctors. Go figure. Lemons and limes? Lemonade and vacation.

coconut lime truffles
Ingredients
- 1 bag good quality white chocolate chips
- 1/2 cup heavy cream
- 2 tablespoons key lime juice
- 1/2 cup unsweetened shredded coconut
- 1/4 cup graham cracker crumbs if you don't want coconut
- 1/2 teaspoon vanilla
- 1/4 teaspoon lime zest
Instructions
- In a double boiler over medium heat, melt the chips and the cream until smooth
- Stir in the lime zest, and the vanilla and lime juice
- Chill for 6 hours, or overnight
- Roll into balls, and then roll in coconut and/or graham crumbs.
- Store in the refrigerator.
