coconut lime truffles
Ingredients

bag good quality white chocolate chips
1/2
cup
heavy cream
2
tablespoons
key lime juice
1/2
cup
unsweetened shredded coconut
1/4
cup
graham cracker crumbs
if you don't want coconut
1/2
teaspoon
vanilla
1/4
teaspoon
lime zest
Instructions
In a double boiler over medium heat, melt the chips and the cream until smooth
Stir in the lime zest, and the vanilla and lime juice
Chill for 6 hours, or overnight
Roll into balls, and then roll in coconut and/or graham crumbs.
Store in the refrigerator.
