Green Giant Veg Pledge part two

Remember a little while back I started the Green Giant Veg Pledge? It was where I started eating an extra cup of vegetables everyday. Me and the family.

You’d think I’d have a hard time with the kiddos… but they were the easy ones. Bigger veggies sides on their dinner plates and a veggie side in their lunches (baby tomatoes, carrots, celery), and, there was a veggie quiche for breakfast. They were pretty simple.

The hubs? Well, here’s  list of veggies he’d eat: (prior to the veg pledge)

  • corn-all types
  • peas
  • green beans
  • carrots (only if they were in something)
  • peppers
  • potatoes
  • onions
  • broccoli (only with cheese sauce)

Now, here is the new list of veggies he’ll eat. (Insert happy wife dance)

  • corn- all types
  • peas
  • green beans
  • carrots (even raw)
  • peppers
  • potatoes
  • onions
  • roasted broccoli
  • roasted cauliflower
  • zucchini
  • mushrooms
  • asparagus

Needless to say, I’m thrilled he’s eating a wider variety, but that it also opens up a ton of new culinary outlets for me. I have a list of veggie cookbooks I want need to get my paws on. But, until my ultimate veggie cookbooks come, I created my own recipes (that I will be sharing later this week) Also, there’s  several On the Green Giant site that I added to my “make” list.

In the meantime, I invented a few of my own veggie sides:

For instance:

Roasted cauliflower with cumin and chili

Parmesan crusted roasted zucchini

Triple pepper saute.

Asparagus onion and mushroom saute (with lemon and garlic)

In Florida, we’re in the peak of our fresh produce season, so tomatoes are primo this time of year. But, tomatoes aren’t vegetables… but I still think of fruits as sweet. Don’t you? Avocados, too. Weird food rules.

Even if your family isn’t “big” on a side of veggies, there’s lots of ways to incorporate more veggies in their diets. Vegetable lasagna, veggie burgers, stir fry, soups and stews, and chilli- (try adding diced butternut squash and carrots) Zucchini is awesome diced up in pasta sauce, and shredded carrots go nice mixed in meatloaf.

If you really have to hide veggies- there are several cookbooks out there that “hide” veggies in foods by the means of a food processor.  Deceptively Delicious id one of them.
