turkey croquettes

croquettes 010So… I made my men yesterday and got great pics. But… it wasn’t my usual recipe. Somehow, I misplaced my favorite gingerbread recipe. So… I made another. You know what? They cut out wonderful, smelled heavenly…but… they…um,uh… SUCKED! I know that’s a harsh crass word for something as innocent as cookies.  Trust me. You don’t want the recipe. Even if the pictures look so good. I’m going to find my other recipe today. I promise. Now, for croquettes:

saute carrots,onions and celery in butter…

add flour to make a roux… and chicken broth to make a thick “paste”

add bread crumbs, seasonings, and an egg along with your shreded cooked turkey….

form into patties and cook in a lil bit of oil until they are golden brown. We had ours with a nice salad and macaroni and cheese….yum.
what you need:
3tbs butter~ in it- saute 1/3 c each celery, onion carrot.
add 3tbs flour to make a roux, ad in 1/2 cup chicken broth to make a paste.
remove from heat: add turkey, 1 egg, 1/2c bread crumbs,and some pepper, parsley. Form into patties and cook until golden brown. Enjoy
