Shelled Pound Cake recipe

I am a member of a Facebook group all about pound cakes. There are some talented people and awe inspiring cakes in that group. One of them caught my eye and haunted me for weeks, and I literally couldn’t not wait to try it. It’s called a “shelled” pound cake. At first glance, you may think it’s a while gelatin dessert. But, upon further inspection; it’s actually a buttery rich pound cake enveloped in a coating of firm chocolate, or confectionary coating.

Of course, if you know , you know- a pound cake is NOT a cheap cake to make. With the cost of ingredients lately, making a pound cake from scratch can cost upwards of $20USD.

And, this being my first attempt at shelling a cake, I opted to test it out with a four dollar mix.

The results were still phenomenal .

To simplify the steps, you bake the cake, freeze it for an hour or so, and coat the pan with melted chocolate, place the cake on top of the melted coating and allow it to firm, and gently very gently pry it from the pan.

A silicone pan would be ideal in this situation. I used my metal pan.

To cut, use a very sharp knife to cut through the hard shell.

Shelled Pound cake

Ingredients

  • 1 pound cake
  • 1 lb confectionary coating or chocolate

Instructions

  • Prepare desired pound cake, this can be a mix or homemade
  • Place cake in freezer for 1 hour
  • clean pan and coat with a light layer of neutral oil
  • melt desired coating per package instructions
  • coat pan thoroughly with melted coating and while still soft, align cake back into pan
  • Allow coating to set fully (you may place in freezer for faster setting)
  • gently umnmold, you may use a thin knife to encourage separation along the edges if needed
  • If cracks occur, repair with melted coating and a fine brush
