Rustic Tomato bacon tart
Ingredients
- 1 pound roma tomatoes sliced 1/4 thick and patted dry
- 6 eggs beaten
- 1 cup mozzarella cheese
- 3 slices crisp bacon
- 1 unbaked pie shell
- 1/4 cup half and half or cream
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 tsp each, salt and pepper
Instructions
- Press the pie crust into a 9" tart pan, line the ban with dry beans or pie weighs and bake in a preheated 375 oven for 7-10 minutes
- meanwhile, slice the tomatoes and beat eggs in a separate bowl, add the cream and seasonings to the eggs
- Line prefaced tart shell with 1/2 of the mozzarella cheese, arrange tomato slices and bacon on top
- Gently pour egg mixture over and top with crumbled bacon and more cheese
- Bake in preheated oven until set- 25-30 minute
