roma tomatoes sliced 1/4 thick and patted dry

half and half or cream

each, salt and pepper
Instructions
Press the pie crust into a 9" tart pan, line the ban with dry beans or pie weighs and bake in a preheated 375 oven for 7-10 minutes
meanwhile, slice the tomatoes and beat eggs in a separate bowl, add the cream and seasonings to the eggs
Line prefaced tart shell with 1/2 of the mozzarella cheese, arrange tomato slices and bacon on top
Gently pour egg mixture over and top with crumbled bacon and more cheese
Bake in preheated oven until set- 25-30 minute
