potato stacks

I saw a pic of these somewhere in cyber-land, and never went all the way to the recipe-sooooo I winged it. Do you ever do that? See a pic of food and kind of guess what it was and make it? I do that. Sometimes it works…. sometimes it doesn’t. Oh well…

Speaking of things that don’t work.

My mouth and brain failed me this weekend. I should have worn my mint-flavored shoes because I REALLY put my foot in my mouth. Not fun. The worst.

No, I didn’t drop the f word in church or on TV.

That may have gone over smoother.

This was worse.

It’s over now… I think…

Anyways… I really messed up and I didn’t  mean harm. That’s not my nature. And, sometimes I assume everyone knows things, and then I realize they don’t and then I’m like….um…uh… *%#.  Throw in a few more ^&$#^ and a few tears cause I felt so bad… and we’ve got one crappy weekend. Add taxed to that… and well, you get the picture.

But- with everything going on in the world, my weekend was the best weekend ever.

I am counting my blessings by the minute.

I’m sure all of you are, too. Life is such a delicate thing- and a beautiful thing….it’s when people forget they’re alive that’s when it becomes ugly. People can get so caught up in the little stuff, and forget the big picture of the here and now, that’s when it’s sad. Every person you meet has a life and a story… and they are all so unique, weather you agree or disagree with them- cherish them for the sheer nature of them being a fellow human.

Oh my… I’m so off the topic of food.  Okay that was my public service announcement. No, I’m not drinking booze now. Just coffee. 🙂

first put a spot of butter in each compartment of a muffin tin

slice potatoes in 1/4″ slices

stack your slices like this

pour a mixture of 1 c milk, 1 tsp garlic powder, 1/2 tsp salt,1/2 tsp pepper as 2 tbs Parmesan cheese over the potatoes

top with shredded cheddar cheese and bake at 375 for about 30 minutes…

yum. 🙂
