In my participation for this event, I received a wonderful box of goodies from Wilton. In it, there was a “DIY-licous” kit for mermaid cupcakes.

I don’t know about you, but I LOVE how mermaids and unicorns have made a “comeback”. As a kid growing up, popular accessories included “Unicorn bags”

of course, unicorns have gotten a lot cuter these days…

As well as mermaids: they are no longer just the fiery red heads define fathers for feet and freedom… now mermaids are everywhere… from t shirts to coffee mugs… to… cookies!

  I created these using a mold from my Wilton DIY-licous mermaid cupcake kit:

Of course, I am going to make the cupcakes, too… I was just in a “cookie mood” Cookies are great for picnics. Cupcakes can get ugly traveling.

Just sayin’ …. cupcakes are for parties, and cookies are for picnics.

For these I made my favorite soft cookie recipe, and topped them with a simple-but-perfect buttercream that was tinted a soft aqua blue , and I topped them with an adorable mermaid tail, casted from melted white chocolate using my Wilton mold.
