appetizer/snack breads side dish vegetarian or vegan

corn fritters (or pancakes…)

These are not the traditional dep fried fritters… they don’t use nearly as much oil and are somewhat healthy!

Start with one can drained corn

1 egg

1 c flour

1/4 cup chopped green onion

1/4 tsp baking soda

salt, pepper, 1tbs melted butter

1/4 c milk

 combine all and spoon batter onto a hot griddle with (appx) 2 tbs oil


I just love my cast iron… it’s lasted so much longer than those fancy pants expensive cookware…


Cook em like pancakes, flip em just when the edges look a bit “dry”- the great thing about these is even if they are a little burnt, they still taste good. Like grilled corn!


great side dish, or to go with chili, or you can ad other veggies to it to make a veggie burger. Such a deal- a million recipes in one! See?! I love you guys!
