Where was I yesterday?

Discombobulated. It was terrible. I started a plan, and I couldn’t even start it.

If you know me on facebook, I had a bodily invasion from Jabbah the Hut. (Forgive me -Star Wars fans, I have no clue how to spell it’s name!) If you are unfamiliar with the creature, he’s this bog oozy blob. Attractive.

So, my inner Jabbah surfaced and I fought back. How? Coffee.

It worked-so I decided I was going to re-arrange the house furniture. In order to accomplish this- I needed to get a bookcase for lil’ one’s room.

I bought a bookcase.

I returned the bookcase-no hardware to put it together.

I bought another.

Guess what I have to do in a hour?

Return it. A part is broken on it.

I have a few choice words in this situation: ^$@(&*@#* !!!!!!!

But, there’s worse things than that. And better things- like my Father in law- an update!!

He had his surgery and is recovering just fine. Thank you all for your prayers and kind wishes. Big hug to all! (If you are a huggy-type. If not, it’s cool- thank you still.)

Well, I managed to make something up despite it all.

Coconut cream muffins.

really, they are not muffins.

But, let’s call em muffins so we can justify them as breakfast food.

I would equate them with a doughnut.

How come donuts aren’t dessert?

Why can’t cupcakes be breakfast? Why are eggs mainly a breakfast food?Who made all that stuff up anyway?

I don’t know either.  I will  google “Who made the unwritten food rules?”

I feed my daughter beans and rice for breakfast. That is a breakfast food. They serve it at Denny’s (in Costa Rica) so that makes it so.

No, not a cockatoo. I am researching the best bird for our family. My hubby wants one that can join him on the boat. Maybe he’s not a cave man- I think he’s more of a pirate. Nah, pirates eat fish…don’t they? I have to really be lucky for my man to eat fish. He’s a cave-man pirate, I think.

I have a stack of books. Now, it’s bird books and food. The librarian must think I have issues.

Don’t we all? Some people’s issues are just more fun than others.

I like my issues. They’re fun.

Now, I will have a few more pictures later on also, You can read this post twice. It’s okay.

I don’t have all my photos taken, and I didn’t want to disappoint y’all this mornin’.

I hope you like coconut. I hated it as a kid.

I love it now.

I also loved to eat paste as a kid.

I hate it now.

Tastes change, I guess.

I don’t know about you, but I love before and after of baked goods. Remember the Toll House commercials that showed the cookies baking in sped up time? That was just fantastic to me. I know, issues.

The original recipe did not call for a glaze.

But, I did.

This batch of glaze SUCKED! It was too thin.

You want paste consistency, not glue!

Coconut cream muffins: from Stephanie Moon

In a bowl, combine:

1 1/4 c flour

1 tsp baking powder

1/4 tsp salt

mix together and set aside.

Now, in another bowl, combine until fluffy:

1 stick butter

3/4 c sugar

now mix in:

2 eggs

Add to that:

2/3 c half and half

1 1/2 tsp vanilla extract

1/2 tsp almond extract

Stir in:

1 3/4 c flaked coconut

Add the flour mixture and pour batter into prepared muffin tins. Bake at 350 for 18-30 minutes

For the glaze, mix 3 c shifted powdered sugar with 2-3 tbs cream or milk until you get a thick, smooth paste. Dip cooled muffins into the glaze and top with toasted coconut, if desired. It’s a good idea to top em with coconut- so the people that don’t like coconut know it’s coconut beforehand. Or you can just tell them, I suppose. 🙂
