cilantro rice

Happy St Patrick’s Day! I have a wee bit o Irish blood in me from my mother’s side, along with German, (is that why I like beer?) But, unfortunately I don’t have a great post on an Irish meal…. why? Because I started this blog in June-and (duh) there hasn’t been a St. Patty’s day in-between. Hmmm. So, tonight’s meal will be next years post (God willing) Today, if you are not in the mood for Irish, I will give you something else green.Winners of contest will be announced in a sticky note sometime around 8am. 🙂

When I posted the beans here the other day, someone said something about cilantro rice. My little mind kept those words floating about in there until I finally did what I needed to do. Google it. So, I came across some recipes and married them together to make this. You know what it reminds me of? Pesto. Yep Mexican pesto.

Cook up some nice rice. (I like basmati)

In a food processor:

1 c cilantro

1/3 c chopped onion

2 scallions

1 seeded, chopped jalapeno

juice of 2 limes

1 tsp oregano

1/2 tsp salt

1/2 tsp pepper

2 tbs olive oil

Pulse until smooth and mix into the rice just before serving. Enjoy!
