almond butter eggs #eastersweetsweek

_DSC7517  When I was a kid, Easter was one of my favorite holidays. As an adult, it still is, but for different reason. As a child, I loved the candy associated with only Easter. In those days Peeps were only around once a year and Cadbury Eggs only came in one variety, Nowadays, there is a Peep for every holiday, and I lost count of all the Creme egg varieties there are.

I remember , my mom would dress my sister and I up in coordinating dresses, white tights, white patent leather shoes (that I was admonished not to scuff) and dainty lace gloves, that almost always ripped somehow before noon. My mom would prepare a classic southern brunch with fresh biscuits, ham, asparagus and spiced peaches.

My dad would come over, (he didn’t live with us) dressed sharp in a three piece suit and smelling like Old Spice, I remember he would make these extravagant baskets for my mom; filled with jewlery and perfume, fancy soaps and trinkets…. my sister and I would get a basket from the Easter Bunny, always in our favorite color. Yellow for me, and purple for my sister.

Nowadays, Easter is my favorite for deeper reasons, beyond ham and candy.

This Easter, as I continue to build my tradition, my own girls will attend church, (pending little one’s cold going away)  hunt eggs, open baskets and eat too many sweets. I haven’t found the matching dresses, (yet-and I’m not sure if I will!) My husband loathes ham, so it is going to be grilled steak, twice baked potatoes, asparagus and homemade rolls.

And, of course: lots of treats:

For my final day of #eastersweetsweek I have Almond Butter Eggs , why Almond butter, you ask? Why not the traditional peanut butter?

Well, last week at an egg hunt my oldest daughter shared a peanut butter egg with my newly adopted daughter. A few hours later, she began to break out in hives. She proceeded to develop a fever the day after the hives went away; I’m not sure if the peanuts had anything to do with the hives or not, so I decided to play it safe and try almond butter. Not that I will be offering any to her, she will probably have a slice of Swedish apple cake and be done with sweets. She doesn’t seem too fond of sweets.

These can be made with any nut butter, or cookie butter you like.

And can be whipped up in 30 minutes. (Yay!)

First, you make a dough with soft butter, almond butter, vanilla and almond extract, powdered sugar and a dash of salt.

Shape into a ball and then into egg shapes.

Dip into melted chocolate and top with a sugar flower.

I made the flowers with royal icing, once a year I will make a batch of assorted flowers to have on hand to decorate fudge, eggs and cookies. Once dried the flowers  last a long time.

Allow the chocolate to set and enjoy!

  2. It is funny how iconic holiday treats are now available for every holiday. And yet they have yet to branch out beyond peanut butter for Reese’s! I love the idea f it with almond butter.
