Sometimes, you need a little something after dinner. A little something sweet… I’m sure you know what I mean. Sometimes, I need a piece of cake. I know some people are like that with chocolate, I get that way with cake. Especially ones from the Publix bakery.
So, during this fasting period hubby and I are on, anything remotely close to dessert is restricted. So, I invented these. I’ve had to make two batches so far. He eats things in even numbers, so they went quick.
They’re simple. They’re easy. They’re healthy. And … they’re delicious.
The ingredients are beyond simple. Dates, water, peanut butter, salt, vanilla, and oats.
Another thing… you don’t have to roll them in balls, either. You can roll them in logs and slice ’em. They taste like peanut butter oatmeal cookie dough. Yeah, now you want it. 😉
Once I’m “permitted” to have chocolate- guess what I’m doing? You got it. Dipping these little nuggets in melted chocolate. MMMMM.

Ingredients
- 1/2 cup peanut butter smooth
- 1 cup pitted dates
- 1/2 teaspoon salt omit if using salted peanut butter
- 3 tablespoons water
- 1/2 cup rolled oats
- 1/2 teaspoon vanilla
Instructions
- Place all ingredients in a food processor, pulse until a dough is formed, adding additional oats if needed.
- Roll into balls.
- Alternately, the dough may also be rolled into logs and sliced.
