potato chip fish sticks~because chips make everything better

public service warning: I go on a tangent in this post. Please don’t read if you like fairy tales.

Remember a little while back when I made goldfish crusted chicken nuggets? This is a spin off on that, except with chips and fish.

 

 

I’m very lucky to be married to a truck driver fisherman. Okay, I guess he’s a captain, too- huh? I have a bounty of fish in my freezer and sometimes I have to apologize to my friends for his foul mouth sometimes. But, hey- at least I can offer my friends fish to make up for my man’s potty mouth. 😉

 

I made these sticks with two types of fish; one was Mahi-Mahi also known as Dorado or Dolphin. (no, not the mammal) the other type was Amber Jack, which I have to say is great for fish sticks; it’s mild and very firm. Heck, you could even pass it off as chicken… but it’s not right to lie. You know that already, though.

 

Anyway, I figure it’s been awhile since I shared some household news… are you ready for some?

Household news in the Mama’s house as follows:

 

Summer is quickly coming, and I’m planning all sorts of kid friendly things to do to entertain my four year old. My older step daughter will be up north with my mother in law for the summer, as she does every year.

I’m looking forward to no sibling fights!

My husband has all these home plans he wants to conquer…

I’m hoping he sticks with them.

I’m going to conquer my sewing machine and sew a wardrobe of summer dresses.

Because I suck at doing sleeves.

I’m going to make friends with my pressure cooker and bread machine.

Because 90 degrees in the shade is waaaay too hot for the oven.

There will be daily smoothies and early morning bike rides.

Because, now we can BOTH ride bikes.

 

Of course there’s more- I have about 76 days.

Back to fish sticks:

I had my youngest join in in the crushing of the chips. My older girl was at her friends’ house. I feel as if I always have to explain where she is… stepmoms have such a bad rap. Thanks to Cinderella. I *%#* hate that story. Not only does it make stepmothers evil, it teaches little girls to be someone they’re not to impress a guy. Tell me, would the prince even look twice at her if she was in her regular gear? Would he have danced with her at the ball if she were in cut offs and a stained t shirt?And, it’s not physically possible to dance and run in GLASS shoes.

Seriously.

So, people seem to always place wicked before step moms. I’m sorry, but stepping up to raise someone else’s kid is WICKED. It’s bad-ass wicked good.

So there.

And, you PEOPLE that tend to label and have input… funny- NONE of you are STEP parents. SO… UNTIL you WALK THE WALK… keep your opinions and thoughts in your tiny fairy tale minds.

Ahhh. Much better.

I have a lot I need to get out. I have been pressed to write an autobiography. I’m not sure if I can emotionally handle that. I wish I was being pressed for something more (a-hem) light.

Like a cookbook deal.

Hint, hint.

Fish sticks. (Jeez, I am rambling, huh?)

potato chip fish sticks

Ingredients

  • 4 cups potato chips crushed
  • 1/2 cup Panko bread crumbs
  • 1 pound firm white fish Mahi, cod, tilapia, etc
  • 4 TBS oil
  • 1/2 cup flour
  • 1 egg beaten

Instructions

  • Heat oil in a skillet over medium heat
  • In a bowl, combine the Panko and crushed potato chips
  • Slice fish into finger sized portions
  • Dredge in flour
  • Dip in egg
  • Dredge in potato chip/Panko mix
  • Cook in oil 4 minutes per side.
