creamy stovetop mac n cheese~ because sometimes you don’t want to turn the oven on.
There are times when I am simply not in the mood to turn the oven on. It’s either too hot, or I am just not patient enough to wait on it to preheat. Then agian, there are other days where I never let the oven take a break. Come to think of it, my coffee maker has days like that, too.
Another awesome thing about this little dish is that you only have to dirty one pan. Of course, being a food blogger, I dirtied two… because I wanted it to look pretty in a casserole dish.
now, I have to admit, I made this a while back… and I wasn’t at home over the weekend becasue I went to Tampa to expierience a TECH munch conference. I’ll have a detailed post on that shortly.. it was a blast.
This recipe is pure comfort food. Not your run-of-the-mill stovetop mac and cheese. It’s rich. It’s creamy. Make you want to curl up in a ball and purr…
Yes, sometimes food makes me purr. But, it’s more like a mmmmprrrr.
Another note to mention,  I started to use whole wheat pasta for the family, ever since my hubby’s Disney incident.  Also, low sodium foods as well, which – I have to say, it is so weird! Now that I’m eating  low sodium along side him, I realize how salty regular food is.
creamy stove top macaroni and cheese
Ingredients
- 8 oz elbow macaroni cooked
- 2 cups shredded cheese I used a Mexican blend
- 1 small can evaporated milk
- 2 ounces softened cream cheese
- Salt/ pepper to taste
Instructions
- After draining pasta, return to heat in the same pan. Add milk, cheeses and seasonings. Stir to melt/ combine.
- Serve.
Shhhh I sneak pretzels when he’s not home. 🙂
