cranberry orange bread

I made this bread and also a spinach tart for my MOPS group this week.  MOPS is moms of preschoolers, in case you’re wondering. It’s not a support group for compulsive moppers, contrary to popular belief. I’m more of a compulsive vacuum-er, myself. I love vacuuming. And organizing. I’ve been known to organize my cabinets and leave them open on purpose to “enjoy it”

I am such a weirdo sometimes.

Speaking of adding to my weirdness, let me tell you about my weirdo dream last night. I totally need Joseph for this one. It was myself, my daughter and my husband. I’m assuming my stepdaughter was with her mom in the dream- cause she wasn’t with us. Anyway, the continents started to shift-and in Titanic style, the three of us are hanging on to the edge of the earth… then things settled and it was apparent that people survived, but not one bit of technology or modern advancement. No man made anything. Not even a toilet- much less Ipads and cameras and cars. Everything was gone. Not destroyed, just gone.  The sucky part of the dream was when we were trying to figure out who else survived- without phones.We just started to wander around “fields of nothing” by the sea.

Needless to say, I woke up today very grateful for things like toilets and phones. And, I’m going to call my mom. Just not right now, since it’s 6:16 am and she wakes up around 11:30. (She gets too many movie stations and stays up watching old movies)

So I made some bread…

I found this pan super cheap and was excited to use it. Jeez, I’m getting nerdier by the minute, huh?

Did I mention I’m taking a night class for sewing? Nerd alert!!! But, when I start making uber-cool retro sundresses it will be all worth it. 😉

I once took a night pottery class with a girlfriend- I think I mentioned it to you… we’d drink long-island-iced-teas and go there. We’d eat, too. So we wern’t that soused. I did drop a blob of clay once… whoops.

Anyway: BREAD. I’m trying to stay focused.

Prep time: 5 mins
Cook time: 25 mins
Total time: 30 mins
Ingredients
  • 1/3 c oil
  • 1 egg (large or jumbo)
  • 1/3 c milk
  • 3/4 c sugar
  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 1/2 tsp salt
  • 1 cup cranberries
  • zest of one orange
  • 1 teaspoon vanilla
Instructions
  1. In a bowl, combine the oil, egg, milk, sugar and vanilla
  2. In another bowl, combine the dry ingredients.
  3. Gently combine the two mixtures, and fold in the cranberries.
  4. Bake in a greased loaf pan in a preheated oven for 20-25 minutes.
