bacon cheddar onion muffins

Mmm, bacon. Bacon reminds me of the following: Sunday breakfasts, cheeseburgers, pancakes, eggs, and my grandmother. She loved her bacon.

I whipped these up as part of a contest. A Foodbuzz / Denny’s Baconalia event where they are collecting bloggers best bacon recipes… you can see em here under the “Flavor of the Month”

These are perfect grab and go breakfast. I’m a huge fan of those, (but, you knew that already). Mainly because morning time is when I get all me emailing, posting, photo uploading , and reading done.

So, I like to have something ready to warm up for breakfast. If it doesn’t require utensils, that’s another bonus. I know, I’m a lazy mama.  😉

And, you guys know I like to show you before baking pics. You’ll notice my batter isn’t smooth. That’s good. You want a somewhat lumpy batter when it comes to muffins. Makes ’em tender. My granny taught me that.

Oh… I miss my grandmother. She was 98 when she passed, and boy did she have some stories. She got divorced in the 1930’s… she had two young boys at the time, and divorced her husband because he drank too much. She never remarried. I have always been really proud of her for doing that… it’s hard enough to get divorced, but in the 30’s with two young boys? Not to mention she was married to a prominent society man. His father founded North Augusta, SC. I know a lot of people in today’s modern times that would stay for that reason alone. It’s not that I am pro-divorce… I just admire her guts.

Anyway, she taught me a few “foodie” things: hot fudge sauce, macaroni and cheese and a few baked good secrets.

You know what else I have? A cookbook from her, “Select Recipes Of Georgia Housekeepers” It was her mothers’. Yeah, it’s real old.  A little tip, if you ever bake from an old cookbook like that, use small eggs. Our eggs today are huge compared to what they had that long ago.

Whoops, rambling.

Recipe: Bacon Cheddar Onion Muffins

Ingredients

  1. 3 slices bacon, cooked crisp and chopped
  2. 2 green onions, chopped
  3. 1/2 c shredded cheddar cheese
  4. 2 c flour 1 tbs baking powder
  5. 1/4 c sugar
  6. 1 tsp salt
  7. 2 eggs
  8. 1 c milk
  9. 1 stick unsalted butter, melted

Instructions

  1. In a bowl, combine the flour, baking powder, salt. Set aside.
  2. In another bowl, mix the eggs and milk, sugar and butter together.
  3. Combine the two mixtures gently by hand, and fold in the onion and bacon.
  4. Batter may be lumpy, that’s okay. Don’t over beat.
  5. Fill lined muffin tins with batter,and sprinkle cheese on top of each.
  6. Bake in a preheated 400 oven for 12-15 minutes.
