The original recipe I found called for carob chips, which surprised me-especially being called “toll House” so, I decided to go with some REAL toll house morsels.
Chocolate is good for you anyway.
These are also vegan- I think. I need to double check with my girlfriend on that. She knows vegan-ism all the way down to chemical processing of ingredients. So, although something may not contain an animal product, there may have been an animal product used in the chemical process…of say, refining sugar. That stuff gets too complicated for me. I admire her depth of research…and brains. She’s a cool chick. Hmmm, I should do a post on her. She gave me an awesome recipe for Congri. I need to make that, too.
So… these muffins. They are really good, especially for being good for you-heck, chocolate chips make anything tasty-even tofu.
Yep, there’s tofu in these.
I am back on my tofu kick. Watch out. (insert kung-fu sound effects)
the tofu mixture replaces the egg and fat which would be in the traditional version of this muffin.
Don’t worry- I am going to make the fatten-your-booty version, too.
Right now it’s booty friendly time.
the “magic” mix:
tofu, applesauce, brown sugar, oil and vanilla…oh yes, and {soy,rice,almond,cow} milk. (your choice)
For the record, I loathe applesauce.
It makes me gag.
I love apples. I just hate their guts when they’re mashed up. Ew.
My dad made me eat applesauce when I was a kid, and I puked it under the table.
He didn’t make me eat it anymore. (whew)
My kids now are shocked when they see it in the fridge- then the oldest says- “You must need it for a recipe!” and my youngest says “Ewww! I don’t like that!” Then I say, “whoops.”
Oh dear, I am raising a prejudiced foodie.

I got this recipe from a book called “Burgers n Fries n Cinnamon Buns-low-fat,meatless versions of fast-food favorites” by Bobbie Hinman.
Recipe yields 9 muffins (I know, that’s weird)
3/4 c whole wheat flour
3/4 c all purpose flour
1 tsp baking powder
1/2 tsp baking soda
* 1/4 tsp salt- I added to recipe
mix above ingredients
In a food processor or blender combine:
1 c applesauce
3 ounces firm tofu- slice and blotted with a towel
1/3 c brown sugar
2 tbs milk or milk substitute
1 tbs vanilla
1 tbs veg. oil
Whirl until smooth
Gently mix the wet and dry ingredients, and stir in 1/3 c chocolate chips OR carob chips.
Distribute batter into 9 prepared (or lined) muffin tins and bake at 400 for 15 minutes.
