I have a lot of names for this-Cuban breakfast casserole, baked toast and eggs, cheesy egg toasts… but, busy day breakfast works for now. It’s catchy, don’t ya think? Me too. I have a recipe that’s called “lazy mom lasagna” but, I don’t know any “mom” that’s lazy. To have the title of “mom” you simply can’t be lazy. As much as we want to…. sigh.
With school days, let’s face it- doing dishes sucks in the A.M. anytime.
What’s nice about this dish:
Uses up stale bread=alleviates the guilt of wasting food
Good protein= full tummies all morning
It has cheese= yum
It tastes good reheated all week long, or until someone says they want cereal instead.
so… our Cuban neighbors, they are awesome. I have known them since I was 12…that’s well… A LOT of years. Anyway, they keep us supplied with the BEST EVER homemade black beans on a weekly basis (I have tried-can’t get the recipe out of her… I may have to put a camera by her kitchen window.) On occasion, they hook us up with Paella, Imperial rice, Lechon Asado, Picadillo, Ropa Veija, and Cuban bread. Many of my dishes here were inspired from dishes they have shared with us. They really are the best neighbors. So…. they gave us some Cuban bread that I never got a chance to finish.
What to do?
Chop, chop! You can use french bread, too. In case you don’t have rockin’ Cuban neighbors.
Now: This was about 1/2 of a loaf- appx. 4 cups cubed bread
add 5-6 beaten eggs
1 sliced green onion
1/2 diced bell pepper
few dashes Adobo seasoning or seasoned salt
1/4 c milk
3-4 tbs onion and chive cream cheese (keep separate)
1/3 c shredded cheese
Mix and place in a shallow buttered dish.
Top with cream cheese in little “blobs” and bake at 350 for 20 minutes.
Jeez- I am sorry about the whole oven thing- I know, it’s hot here, too.
To serve, cut into squares and eat out of hand or with a fork.
To reheat, nuke for 20-35 seconds depending on how old/new your nuker is.
Sandwich ideas!!! Well, would you believe I had a fun and tasty sandwich to share and my battery camera died. gasp!

Today’s sammie:
Peanut Butter and carrot raisin cinnamon
Shred 1 carrot and pat with a paper towel, add a few dollops of peanut butter and a splash of honey and cinnamon along with a few raisins. Put into a pita or on bread. It’s like peanut-butter carrot cake. Really. Mmmm.
More tomorrow. Really- I am so in sandwich mode.
