This is so simple and easy, folks. You can make it with meat, or without-it’s good either way. I added meat to mine at hubby’s request. Although he said it’s a keeper either way.
This is a good meal when you need to go to the store… most ingredients are in your pantry. Except the cheese and maybe meat… duh, that needs to be kept in a controlled environment. But, y’all knew that.
onion,black beans,corn, salsa, diced green chiles, chilli powder, cumin and salt and pepper.*ground beef is optional- complete recipe at the end of this post.
For the crust, take 30 crackers (the buttery round ones) and pulse them in a food processor until they look like this:
mix them with 1/4c melted butter and 1/3 c shredded cheese. Press into a pie dish.
Now, next time I am going to try it with crushed tortilla chips- doesn’t that sound delish? Like a nacho crust! Now, after it’s pressed in there bake it at 350 for 8-10 minutes. Set aside.
Here’s the recipe: *adapted from “The Convenience Cook” by Judith Finlayson
Saute 1 c onion until softened. Add 1/2 lb ground beef or turkey if desired, and brown. Season with :
1 tsp garlic powder
1 tsp cumin
1 tbs chili powder salt, pepper to taste
add: 1 4oz can diced green chilies-drained
1 can black beans, drained
1 can corn, drained
1 cup thick and chunky salsa
Now, add 4 oz cream cheese cut into cubes and cook until melted.
Spread mixture evenly into cooked crust, top with extra cheese and green chilies, if desired.
Bake at 350 for 10-15 minutes, allow to cool 10 more before slicing.
