strawberry mousse tarts

I made these just like the guava tarts and other “baby pies” here.

But, it being summer…and fully understanding how when it’s hot out, sometimes it’s necessary to be “lazy”. So, I will tell you how to make this the lazy convenient way. How’s that sound?

Take some pie crust. (I’m a nerd, I made mine) you can use any though.

Use a cookie cutter to cut out circles and gently place them into a muffin tin. Like this pre-bake them and let them cool.

Are y’all ready for the filling? I call it mousse- but really what happened was I was craving something pink and fluffy and this was what came out of that craving. I am not sure if it qualifies as mousse or just “strawberry whipped cream” most likely it’s the latter, but mousse sounds more elegant. I’m a girl…if it’s pink it has to be elegant. Hot pink, however falls into a different slot. Hot pink means party. My thoughts…don’t mind me…back to it:

For the filling, simply take 1 c heavy cream with 1/2 c powdered sugar, 1 tsp vanilla and 1 tbs strawberry sauce

Beat with a mixer at high speed until fluffy peaks form. (about 3 minutes) watch carefully- don’t over-beat, otherwise it will turn into butter.

Spoon into shells and top with sliced strawberries. You can make these with any fruit…play with your food…it’s okay.

These are officially one of my favorite summer desserts….. cool and refreshing. I may make a lemon version next…

but, strawberries are really nice…
