oatmeal creme pies

Okay if you follow me,you know that a lot of my treats end up being giant versions of lunchbox treats. Boston Cream Rolls and Swiss Cake Rolls, for example. I was at it once more when Kellogs spotted me some yummy All Bran cereal.  They supplied me with several recipes, but I was in one of my snack cake moods, so this is what I made.

*To get the texture just right, you need to put your oats and bran buds into a food processor and pulse a few times , to even out the texture.

Fluff together:

3/4 c dark brown sugar

3/4 c sugar

3/4 c butter

1 tsp vanilla

2 tbs dark corn syrup

1/2 tsp cinnamon

Now add

2 c flour

1 1/2 c oats * see note above

1/4 c bran buds cereal or bran flakes

1/4 tsp salt

1 tsp baking soda

mix dry and wet ingredients together add in 1/3 c hot water

drop by tbs onto parchment lined cookie sheet

freeze for 15-20 min before baking at 350 for 9-12 min

Butter-cream filling:

Take 1 stick softened butter, (salted) add 4 c shifted powdered sugar, 1 tsp vanilla 3 tbs cream

mix until fluffy and sandwich between cookies. Enjoy!
