Sweet and spicy corn Muffins

Ever crave something kind of sweet, kind or spicy and comforting all at once?

These are it.

Sweet corn muffins , (I cheated and used a mix, shhhh) infused with spicy peach-mango salsa and a touch of tangy cheese. I made these for the Desert Pepper recipe challenge, they are so good for game day, or brunch or that go between snack on a chilly Fall day.

Of course, you could use regular salsa here, but I felt that the slightly sweet peach would marry perfectly with the sweet corn muffins.

And it does.

This recipe features Desert Pepper salsas and cheese sauce, and it’s also part of a recipe challenge that they so gracefully invited me to take part of. They sent me samples of the items to create this recipe for y’all, and you can find their products at Sprouts, Publix, Hannaford, Harris Teeter, Shop Rite, Walmart, Giant Eagle, Market Basket, Jewel, and Meijer

I was sent samples to participate, however the opinions expressed are my own. 

 

Spicy Sweet Corn Muffins

Ingredients

  • 1 box corn muffin mix, (sweet style if available) * I used Krusteaz brand for this recipe)
  • 1/2 cup Dessert Pepper Peach Mango Salsa

additional ingredients per package directions

  • 1/4 cup Dessert Pepper Queso Cheese sauce

Instructions

  • Following package directions, add ingredients to bowl, *HOWEVER, reduce liquid on package directions by 1/4 cup
    Mix in salsa, and cheese and bake as directed
    Serve warm or at room temperature.
    *Goes great with chili
