lechon asado or cuban roast pork

This is officially my daughters favorite food next to sushi.  In addition, it is my hubby’s third. Not bad for me because it’s EASY~CHEAP~YUMMY chomps!

Best served with some black beans and rice…and some fresh lime slices.

very simple~ heat some olive oil in a dutch oven or heavy pot. Add the juice of 4 limes (don’t discard the limes) a coarsely sliced onion, and chopped garlic and fresh ground black pepper.  Place everything in the pot (including the limes) cook down at med~high for 5~7min. Remove the limes and add the roast….get it nice and caramel colored on each side. Reduce heat to med~low and add 1/2~3/4c dry white wine. Cover and cook 3- 31/2 hrs add 2-3tbs kosher salt  and shred the roast , and remove the fatty parts. The roast is done when it shreds easily. Serve with a fresh squeeze of lime juice!
