Key Lime Thumbprint cookies #summerdessertweek

Welcome to day three of #summerdessertweek. I don’t know about y’all but for me, Key Lime Pie is that quintessential summer dessert. It’s tart and cool, and reminds me of holidays spent fishing in the ocean all day and cooling off in the pool in the afternoon. But: Summertime also means picnics … and, let’s face it: Pies are not for picnics.

But: what happens when a key lime pie and a shortbread cookie meet, fall in love, get married and have babies?

Another note about Key Lime anything- I always add a dash of vanilla to amp my Key Lime flavored sweets. It tends to add a nice softness to the tart, and makes everything a little more gentle tasting. For these I used Adam’s vanilla. I have never hear of/ seen Adam’s where I live. (!!!!!) So, when they sent me samples, I got very excited. Now that I’ve tried it, I won’t go back. It’s the first vanilla I’ve used that doesn’t bake away it’s flavor. And, vanilla is such a good flavor. Completely underrated, if you ask me.

A little disclosure on this recipe and it’s production: Originally, these were intended to be bite sized thumbprints. But they ended up more like toddler palm print size. The reason this happened is because I was impatient and didn’t let me dough chill out long enough. So: consider this your PSA: Let your dough chill out 1-2 hrs after you form it. 😉

On another note, the filling in this recipe sets very well, so it’s not messy for road trips. So: you don’t have to stress about lime smears all over the back seat of your car. Which, is always a plus.
