Swedish apple cake with vanilla sauce #eastersweetsweek

The house next door to us is an AirBnB, which to be honest : I loathe. I have three young kids, and I don’t like strangers showing up in such close proximity to home. Sometimes, my “mama bear” comes out… for instance: college kids lighting fireworks that were landing on our patio roof, and then they woke the babies up. 

Public service announcement: Do not wake up any baby when there is an exhausted mama (or papa) nearby.

And: Don’t light fireworks if you don’t know how. Otherwise, a mama bear might call the police on you.

So: recently we noticed a new group of people with kids next door and we all got to talking. They were on holiday from Sweden, and they were going to be our neighbors for about a month. They had their children with them, and- before long my kids were playing with theirs despite the language barrier.

Of course I was uber-excited to chat with them about their country, food and lifestyle. And, they were just as excited to visit my home state, so I put together a little “must-do locals list” for them complete with coupons 😉

During the course of the month, we all grew to be friends: They were graphic artists for Spotify and also children’s book authors. They invited us for a Swedish Fika; (a coffee hour filled with delicious sweets) and we invited them for traditional American bbq. Later on during the stay we had “Pancake Thursday” ; but omitted the traditional pea soup that precedes the pancakes.  Good times…

Around this same time I was shipped a beautiful box of apples from Rainer Fruit.

The were absolutely the best apples I had ever eaten, crisp and sweet with just a hint of tart and a sweet aroma that was reminiscent of chamomile and flowers.

Many of these were devoured by my family, but several I set aside to be made into sockerkaka med applen.

Think of it as an apple pie and a coffee cake had a baby in a bakery.

Because you have the apples and cinnamon, baked in a creamy almond cake and topped with a smooth velvety vanilla bean custard sauce.
