#summerdessertweek: baby blueberry cobblers

blueberry cobblers… had babies.

And, these portion control cuties are all you need after a summer meal of lobster rolls or shrimp stuffed avocados.

I love food in miniature… first of all, you don’t have to dirty up an extra dish to serve up, and- one less dish is always a good thing.

My camera batteries were dead when I was preparing this so I had to utilize the phone for the images, and it was pretty aggrivationg since I had just charged them both the day before. #newworldproblems

But, I’m not going to fret or complain about batteries, cameras or images. I happy to live somewhere where I can speak freely (mostly about food, of course) and have the luxury of having food period.

Keeping it in prespective, you know.

So: these babies have a “secret” ingredient: pancake mix. 😉

Using pancake mix along with sugar, flour and butter leaves a fluffy and crisp topping: perfect for gooey sweet blueberry filling to cling to. Yum.

Speaking of babies, I finally got “the baby” to eat. This is huge in our house because she has literally pressed her lips and turned her face at every form of baby food there is on the market. So, what finally worked?

Real food.

Mashed potatoes, yogurt bites and mum mums to be exact.

What a relief. I seriously was wondering if there was an “issue”. I doubt there will be any “issues” getting people to eat these. 🙂

This recipe only makes 4, so you may need to adjust according to your family size.
