rum balls

You will love this. Really. And sooo easy. But, first let me tell you a story. Yesterday I made meatballs. And these. These are a surprise for Valentines day. The meatballs were dinner. When you make these you have to let them sit in the fridge as little naked balls overnight. Unfortunately, I didn’t have a “secret” fridge to hide em in. 🙁 Hubby saw em and said the meatballs looked weird. For fear of him cooking them up, I had to tell him what they were. Poor guys’ eyes lit up. But they weren’t ready. So, after dinner he excitedly made a move for my naked little rum balls. I had to halt it. Now, my dilemma: they are all wrapped up and ready for Sunday. Do I tell him I dropped the pan of them and need to make more? Or do I just say happy early V-day? Hmmm. As you ponder my dilemma, head over to the dollar store and get an empty heart box and some little candy cup liner things…. because these are just too purdy easy and yummmeee to pass!

begin with 2 c vanilla wafers and 1c sugar and 1/2 cup of either almonds, pecans or walnuts.  Pulse in a food processor until they look like this….

for this particular batch, I happened to use almond meal. It worked out great.

now to the wafers, nuts and sugar, add 1/3c melted butter, 1/4 c rum and 1 tsp vanilla and 1 tsp almond extracts

roll into 1/2″ balls

cover with wax paper and hide em in the fridge overnight. The next day roll them in powdered sugar. Store in the fridge, in a inconspicuous container. 😉

Betcha can’t eat just one!
