Peaches n cream breakfast cake

Hello folks. I know, I know- I have been gone a few days. Sometimes, you just need a visit to LaLa land.

I made this breakfast cake for my in-laws. See, I had these peaches and I am still on the cream cheese kick and this is what became of that:


Yum. See the cheese and peaches all baked through? Oooo- check out the streusel topping? Oh yeah baby!

I will get to that in a few. First, a few public service announcements bits of gossip.

Okay, gossiping is wrong. But is it when I gossip about myself? Hmmm.

School starts this week and that means I will do a sandwich post section. Although my stepdaughter only likes PB&J or mustard and cheese and the occasional lunch meat- I will give y’all other sandwich ideas, because sandwiches are fun.

Radish and cream cheese? Turkey, arugula and brie ? Grown up sammies. Fluffernutters. Oh man.

In addition to school starting- more family easy fun tasty meals. My MIL gave me an idea that y’all will love.

Gossip? I am going to be begging all you guys to cheer me on real soon. I am attempting to compete in a contest similar to “Next Food Network Star” except it’s for food blogs. Eeek. Challenges. Gives my butterflies and chills all at once.

More gossip? I need to make a birthday cake. My almost 3 year old is asking for a rainbow-cockroach-monster cake. She has a fascination with cockroaches. I think it may be the raid or Terminix commercials. She loves monsters and somehow, she thinks cockroaches are the “monsters” of  the bugs. I guess they are. No- I think palmetto bugs are. Have you ever seen them? Think: 3 inches of FLYING roach. Beyond EW. Jeez- how I am I going to move into a cake recipe after this talk? I guess gossip was a bad idea.

Feel better? Me too.

I want a baby. Hubby says no. So, I want a parrot. Hubby says no. So I want a Nikkor 50mm 1.4. Hubby says yes.

A camera lens is not going to fix my biological clock, dear. Men.

Food!!!!

Slice up 2 peaches.

Grease and flour a loaf pan.

Preheat oven to 350.

In a bowl mix:

1 1/2 c flout (haha FLOUR)

3/4 c sugar

1/2 tsp salt

2 tsp baking powder

Now add:

1 big egg

1/3 c veg. oil

1/3 c milk

Mix well and pour SOME into the loaf pan- enough to cover the bottom 1/2″

Top with some of the peaches.

Pour the rest of the batter over it.

Top with the rest of the peaches.

Now, in a bowl mix :

4 tbs softened cream cheese

1/2 tsp vanilla

3 tbs sugar.

Drop dabs on top with peaches.

Now place some dabs of butter around there too- I used 2 tbs, and cut it up small(thumbnail sized)

Now sprinkle that with flour (3tbs) and sugar (4 tbs)

Bake at 350 35-40 minutes. Enjoy. Chomp.
