mama’s potato salad

Potato salad. Definite summer food, don’t you think? Me too. I never eat the stuff in winter. Isn’t it weird how certain foods “belong” in seasonal situations….

Speaking of situations…if you were invited to dinner at my house at six, would you go see a movie that started at 5?

I think not.

That’s why there is a pair of movie tickets up for grab- all you have to do is comment and tell me the last movie you saw. Winner will be chosen(at random) next Tuesday July 13th at 8:00 am EST.

I know, there are a zillion potato salad recipes out there. This one isn’t fancy. It’s down-home-mama-style.

But….sometimes that’s what you want. Down-home-mama-style.

To begin, I cut up some partially peeled red potatoes and boil them in salted water.

After they are fork tender- salt to taste.

While they are warm, but not hot add 4-6 tbs of  either ranch or blue cheese dressing.

Toss to coat…

Now, add 2 stalks celery. Chopped, of course!

Now, add 3 chopped hard boiled eggs…

1/2 of a shredded carrot, and some sliced scallions…

Now- kick it up! Add a dash of garlic powder, 4 tbs mayo, squirt of lemon juice, fresh ground black pepper, and a nice squirt of Dijon mustard.  Oooo, you can also add some crumbled bacon, too.  I just forgot to on this particular day….
