Jamaican banana bread~ banana bread studded with coconut, pecans, lime & rum
It’s been a week since I’ve posted, and my last post was full of heartache over the loss of my dog. Little did I know how much things would change both for good and bad in the span of a week. Lots of tears were shed, and I began to worry as our other dog began showing her grief as well. But, as life happens- so does change… and with change comes blessings.
We were blessed with another rescue dog yesterday. We’ve named him Odie and he will have his very own debut here, in a few days. Along with a homemade dog biscuit recipe I’m sure. Because dogs deserve to be spoiled.
As for now, I have banana bread. Because I bake when I’m sad…. and I made this bread. ( among other things…)
This isn’t your run-of-the-mill banana bread. No sir-re-Bob (who’s Bob?)
It’s got rum in it & outside of it. It has coconut. It has lime….oh yes, it’s like a vacation bread. Because everyone should have lime, coconut and rum on vacation. ( Or, at least on a Friday.)
I took a lot of “after” baked pics…and not too many “before” because this bread is much “prettier” after it’s baked. It pretty much looks like lumpy baby food as a batter. Ewww. Much better baked up & sliced.
As much as I’d LOVE to claim this recipe as my own, it’s not. It’s from Cooking Light, March 1997 to be exact. And, I’m not going to plagiarize by formatting it here to my site… I’ll give credit where credit is due and give you a nice link right to the recipe. 🙂 Printable, too. Enjoy folks.
