free fish tacos~ well, almost free..
I say almost free since there was money spent on:Â tortillas, cabbage and lime. ( The tomatoes came from my garden)
You may already know about the whopper my hubby caught last week…because thanks to our new technology (we both got new phones) I was able to pimp my hubby out on Facebook and Twitter, seconds after he reeled this in:
30 pounds. Normally, when ever my husband goes fishing, he wants burgers for dinner. He says he smells fish all day and it’s not appealing to eat after that. But, on this particular day, he requested fish tacos. Yum.
I didn’t head out on the boat with him that day, I was busy picking strawberries and making homemade shortcakes and graham crackers. He was nurturing his inner hunter/gatherer and I was nurturing my inner June Cleaver. Heck, I think I even vacuumed that day… sans the pearls.
I marinated the fillets in a mixture of olive oil, cilantro, pepper, lime juice, cumin and some salt. Then, I cooked em up & served on soft tortillas with shredded cabbage, tomatoes, and a fresh squirt of lime juice. No salsa. No cheese. Simple & fresh & healthy.
