Isn’t it funny how the you can call food and other things cheesy? This is cheesy.
But, it’s ooowey-gooey-creamy-dreamy cheesy. Oh yeah. I am starting to develop a fondness for cream cheese. Oh dear… I am really going to have to: pull weeds, walk run dogs, scrub bathrooms, chase toddlers, mop floors, ride race bikes, wash dishes, make beds, hang laundry, sweep patio, scrub boats, rake leaves and maybe even exercise to keep my fondness from going to my booty. And hips. Yes, that’s my regimen. Except throw chasing toddlers on playgrounds in there, too. Climbing up big metal things. They ought to make adult playgrounds. I still wish they made people sized hamster wheels. Those just look fun. I probably would never get stuff done, though. Seriously- this is my theory on those: The hamsters get addicted to the endorphins from the exercise, so they can’t stop. They’re wheel junkies. I am surprised nobody has had an intervention.

It’s another “I-don’t-want-to-go-to-the-store” meal. And, it uses cream cheese.
Speaking of the store- I got 25lbs of flour for $5 bucks and change!! That’s 800 cups of flour. I’m excited about that. I know it sounds cheesy. But- I am a bit cheesy, don’t ya think? Cheesy is good in food- why not people?

CHICKEN!
This is what I did:
Pond 2 boneless chicken breasts flat- (put plastic wrap between chicken and your weapon of choice) I used a mallet-thing’
In a vessel (or bowl)
mix: 2 oz cream cheese
1 tbs chopped black olives
1 diced dried tomato
1 tbs chopped fresh tomato
dash garlic powder, Italian seasoning, salt n pepper
3-4 tbs shredded mozzarella
1 tbs parmesan
Spread on each breast, and roll up-secure with toothpicks. Place in the freezer for 15 minutes. Meanwhile-heat some oil in a large skillet. (cast iron rocks)
Dip in beaten egg, then in breadcrumbs. Fry about 5-6 minutes each size, until juices run clear and chicken is no longer pink in the middle. Top with more cheese.
I had mine with tomato sauce and gnocchi on the side, I never had gnocchi before. My hubby didn’t believe me- like I would lie about that-much less I hate loathe liars. But- it’s true, I had never had it before that moment. It is so good. I need to make some from scratch sometime. Looks like a lot of work, though. All those little balls… isn’t there a gnocchi maker? I will have to check ebay.
