Sicilian tart

When I found this recipe for Sicilian tart, I thought two things: easy and one dish. I get happy when recipes don’t call for a lot of dishes to dirty up.  I’m sure you know what I mean….

This recipe has got to be one of the easiest snacks/appetizers/brunch items out there. Dice up some vegetables and mix them with  ricotta cheese and shredded mozzarella cheese. Spread the mixture onto (pre-made) pic crust dough….

 

…crimp the edges of your dough:

…and then pop it in the oven for 30 minutes or so…

(Don’t you love before and afters?)

Now: big question, how does it taste?

Fantastic. Light, crisp and cheesy. But, next time I will be adding bacon or another salty cured meat. In my world if bacon can go in it- it will.

Now, a lot of you may expecting some festive spooky Halloween treats like 99% of the other blogs have.  I have totally slacked this Holiday. I usually have already made my cocoa spiderweb bites and my ghost cookies by now. Unfortunately, catching a cold, and taking a trip consumed a lot of my “free bake” time. Today isn’t that much different. I have a cake to make today, and it’s for my nephew’s first birthday party… so I don’t think I’ll be able to get away with anything too creepy.

But, it would be funny for a minute..if I showed up with a white brain shaped cake with a red velvet interior and cherry filling…then I could be like all the other bloggers posting Halloween stuff….hmmm.

Nah… my sister would be so mad.

Maybe next year.

Needless to say, I’m not sure if I will get to make any spooky cakes or cookies. 🙁 Is it even possible for a cookie to be spooky?

I think not. Regardless of my lack of Halloween baking, I decided I better get a head start of my Christmas cookies now.

That way I’m not late. Right? Right!
