pizza dip

This is the ideal snack for after school/ football/ fall/anytime.

This was also a post that was scheduled to be published last week. LAST WEEK!?! Last week was one of those weeks that felt like it was only two days, but- my calendar claims it was seven.

Last week : My step daughter came home from a summer at grandmas I have to say, things have been AWESOME since she’s been back… usually there is a period where she would argue & not listen and it would take a few weeks to get into a routine. Not this time.  Maybe it’s because we got into a nice routine right when she returned…there’s been other times where there are distractions. Needless to say, it’s been just great. 🙂

Last week: My daughter turned five (sniff, sniff) and I had to do EVERYTHING in one day. Shop, decorate, wrap, bake cake…aghhhh. I had to do it all in one day for two reasons: 1) she was in school 2) I had NO MONEY until that day.

True story- I was totally broke for a few days.  That’s the worst when you pay your bills and NOTHING is left over. Ouch. It’s a bit better now.  🙂

Last week: We prepped for a possible hurricane and ( luckily) we only got tropical storm conditions. So- we lost power, our street flooded, and  I slipped and fell while trying to catch a toad ( I was bored) and oh yeah, school was cancelled for today. Which kinda sucks because I’m sore as can be. Why does it hurt so much worse the older you get? I remember skinned knees and bruises were nothing as a kid…nowadays I’m wrecked the day after a fall. Jeez.

Now: I did manage to make pizza dip and yes, we have power now. 🙂 Oh yeah… I love Advil, too.

Back to dip:

Now, this pizza dip recipe is just about the easiest thing there is. Perfect for a snack when you know it’s going to be a late dinner because you forgot to turn the oven on. Not that I ever do that… 😉

The ingredients are items you have on hand: cream cheese, Italian seasoning, garlic, mozzarella cheese, pizza sauce and a bit of mild cheddar cheese.  I made a few adaptations from the original recipe; I cut the cheese and sauce in half and the cream cheese by 1/4. I used a smaller casserole dish as well- the original recipe calls for a 9x 13 pan. I used a 6×8′ dish.  Next time, however I will make the full size. Yep, it’s that good.

I served my with this slices of fresh bread… but I’m sure this would go awesome with pita chips. Or crackers. Heck, even on a spoon…

Also: next time I make it- I’m adding some black olives and pepperoni. Wouldn’t that be good?!
