Little Pink Cupcakes-

(noun)  What a mom makes for a stuffed animal’s birthday.

My daughter has a stuffed turtle named Woody. But, don’t call it a boy. It’s a girl. And, since  my daughter’s birthday is fast approaching, she decides it must be Woody’s birthday, too.

Birthdays call for cake. Or, at the very least, cupcakes.

And… since I was planning on making a big cake for her…. I decided to make the smallest-ever batch of tiny cupcakes.

The entire recipe make 12 mini cupcakes… which was perfect, because stuffed animals don’t eat too much.

Isn’t this the prettiest girly-est pink ever???

Now, before I get to my tiny cupcake recipe…here’s a bit of household news:

I have to hurricane shop today.  I have to stock up on bottled water, canned goods and granola bars. Oh yes, batteries, batteries, batteries, gas,gas,gas…. and a few more items.

I’m also making the “official” birthday cake. It’s a rainbow cake. How ironic. We may have a hurricane in the next few days, and I am making a rainbow cake.  As most of you guys know, I have lived in Florida my whole life. I’ve been through a lot of storms, and wrote about my worst experience here.

At least with this storm, we will have a big ol birthday cake to eat.

Hurricanes make you fat sometimes.

But, then you burn it all off cleaning up the debris. So, it all evens out.

Hey.. can you tell I used leftover Valentine’s Day wrappers? Shhh… don’t tell.

Recipe Type: dessert
Prep time: 10 mins
Cook time: 20 mins
Total time: 30 mins
Serves: 12
Ingredients
  • 3 tbs butter, melted
  • 1 egg
  • 1/8 cup milk
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
Instructions
  1. Line 12 mini muffin pans with liners, or grease.
  2. Preheat oven to 350
  3. In a bowl, combine the flour, baking powder and salt.
  4. In another bowl, mix the egg, milk, extracts and butter.
  5. Combine the tow mixtures together.
  6. Fill each muffin tin 2/3 fill with the batter.
  7. Bake 18-22 minutes.

And, for the frosting:

Simply mix 1/3 cup shortening, 1/8 teaspoon salt, 1/2 teaspoon butter flavor, 1/2 teaspoon vanilla extract, and 2 cups powdered sugar. Add in 2-3 tbs of milk if mixture is too thick. Tint with 2 drops red coloring.
