jalapeno cheddar waffles

Cheddar Jalapeno Waffles……  sometimes you don’t want sweet for breakfast. Sometimes a sweet coffee is just enough sweetness to get you started…sometimes, you want something savory. Stick to your ribs spicy cheesy savory Jalapeno-Cheddar Waffles.

Sometimes, you want breakfast for dinner… and, yep- you guessed it. These are rockin’ for dinner.

Sometimes, you want to hear about something other than food from me…

And… this just may be your day!

Because today I’m going to ramble a bit. Remember how my rib has been hurting? Yes, it still is. But, whatever… eventually it will stop. For now thee is Advil and Aleve. (not together of course)

I went to the fabric store yesterday. (I had to… I had a coupon. )

I bought some white muslin, some real thin white material and a spool of …whatever that’s called.

I wanted to buy a sewing machine. But, I was being cheap thrifty.

Every few days, my hubby and I leave messages for each other on my chalkboard. It’s quickly becoming my favorite part of the kitchen.

When it’s rainy, and my daughter naps, I like to dust these off and go through them.

Food photography has come a long way since those days…

This recipe was based on  one of those books. It was a basic cornmeal waffle. I tweaked it. If I ever have a cookbook or cooking show; I would totally say tweak. And totally. And seriously. And really. And yum. And blob.

That’s probably why I don’t have a cooking show or cookbook.

I’d keep it too real.

Oh well….

jalapeno cheddar waffles

Serves: 12
Ingredients
  • 1 3/4 cup flour
  • 1 cup yellow cornmeal
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 eggs
  • 2 1/2 cups buttermilk
  • 5 tablespoons butter, melted.
  • 3 tablespoons sugar
  • 1 jalapeno, finely diced
  • 1/2 cup shredded cheddar cheese
Instructions
  1. Super easy.
  2. Combine the flour, cornmeal, salt, pepper, and baking powder.
  3. Mix the eggs and buttermilk.
  4. Gently fold the two mixtures together.
  5. Add the jalapeno and cheese.
  6. Bake on a preheated waffle iron until golden.
