I have been having a hard time deciding on dinner lately… my mind has been on bigger things. Our mortgage, bills, my car, and raising awareness for problems that exist here in our country.
One in particular is childhood hunger, and there is a campaign going on right now with Share Our Strength and Yahoo. Basically, Yahoo has committed to donate $20,000 to Share Our Strength-a national nonprofit working to end childhood hunger in America. The organization has ambitious goals and is working creatively to meet them, making sure that children don’t just have enough to eat, but that they are getting the nutrition they need to learn, grow and thrive.

Now, food- this is another hubby wanted for dinner because my mind was blank.
Another good thing: these are baked. Traditionally these are deep fried. I got em golden by brushing them with a bit of melted butter.
The filling? You can do whatever you want- seasoned chicken, rice and beans… taco meat…I did some regular ol’ seasoned taco meat. Mmmm, tasty.
The shells are frozen empanada dough…you can find them in the Latin section of your grocers’ freezer. Or, they may be with the frozen doughs and pie crusts…
And, all you have to do is cook up your filling, stuff them and brush with a bit of butter, and bake at 375 until golden- about 8-10 minutes.
I served mine with some lettuce and tomato on the side, and beans. On paper plates. With water. At 7:15 pm. I think Jeopardy! was on….
