As promised- here are the lovely little bars. Mmmm, these are nice and somewhat booty-friendly. 133 calories each. According to Cooking Light, where I got the recipe from. It’s an oldie, dating all the way back to Dec. 2008. No, I don’t hoard magazines, I just keep binders full of parts of magazines.
I’m a recipe nerd.
These little gems are tasty. And they have so many cranberries, it just may send a UTI running. But I’m not making medical claims. Just taste claims. So far, nobody has gotten sued over saying something was tasty… that I know of, that is. However, medical clarins is different.
It makes a nice pat-down crust that’s real “oaty” note: spellcheck is mad. You guys know what I mean by oaty, right?
Next, you pour your filling over it.

Guess what I did the other day?
Bought a cheesy pink tree.
It’s beautiful.
Now, both my girls have their own tree. She wanted the pink one, and she’s sitting really far from it in the picture, so that she’s away from the plug. She dislikes plugs. I’m glad of that.
We’re excited about the holidays-when my hubby isn’t home- we jam out to Christmas music and watch parades…
Big sis was with her mama, so I had to be the mom and big sis at the same time. It’s okay, I had fun.

Cranberry-Oat bars:
from Cooking Light, Dec. 2008
1 c flour
1 c quick cooking oats
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp cinnamon
6 tbs butter, melted
3 tbs orange juice
Mix all in a bowl, and place most of it- (set aside 1/2 cup) onto the bottom of a greased 11×7″ casserole dish.
For the filling:
1 1/3 c dried cranberries
3/4 c light sour cream
1/2 c sugar
2 tbs flour
1 tsp vanilla
1/2 tsp grated orange rind
1 egg white, lightly beaten
Combine all and mix until combined, pour over crust and sprinkle the reserved oat mixture on top.
Bake at 325 for 40 minutes.
Note: I added a handful of raw fresh cranberries, because I was a little short on the dried ones. It came out fine.
