two pepper chicken

You guys know how much I ♥ green chilies.

If you didn’t…well, now you do.  Saturday, I roasted up some poblano peppers and jalapenos, they got nice in ugly after about 10 minutes in the toaster oven at 375°.

Now, place em in a brown bag to steam/cool down.

And, just look how easy that ugly-ness peels off!

Like paint stripper for a pepper.

oh yes! And, now you know I am left handed.

I am glad the shutter button is on the right hand side for that reason.

I think that’s one of the few things on earth that work for leftys. I am sure there is more…right now I am a bit slow. It’s early.

here’s my little ugly jalapeno. Isn’t he darling?

now, just chop em up. Watch those seeds…and your fingers.

Take some chicken breasts, place em in a ziptop bag and release your anger on em with a kitchen mallet. In other words, pound them out so they are pretty thin. Dip em’ in flour, beaten egg, and then bread crumbs. I wanted panko. But, I was out. Grrr.

Cook em’ up in a bit of oil until they are golden brown.

Place on a platter lined with paper towels after that. Or, newspaper works good, too. It’s super old school but great if you don’t want to use up the last roll of paper towels in the house and you have a boxer that likes to lick glass doors. Or, a cat that licks mirrors… I had one of those once, too.

Yes, my days consist of wiping off dog licks from doors.

Among other stuff.

Today is floor day. And laundry. (no, I still don’t have a dryer-so laundry is a day-long project.)

Hmmm, I also need to do the bathroom. Ugh. I loathe cleaning bathrooms. Not my fav.

Enough bathroom talk.

That platter of chicken? Remove the paper towels. Is it oven proof? Oh good.

Now put blobs of cream cheese on that chicken, the peppers and some good meltin’ cheese. Bake it at 350 until the cheese is all melted and  bubbly.

I used some from the Latin market. The name was in Spanish- but they said it melts good.

They are so nice to me there.

It’s cause I’m the only gringa that shops there, I think.

I think they think I am crazy so they are nice to me.

Just kidding.

About the crazy part, at least.

Now, at the Pakistan market. They  know I’m crazy.

Not really.

They give me lollipops there. Well,they give them to my daughter- but then they say, “You take one, too!”

Places that give free lollipops are the best.
