a 5 minute meal

Woah. Catchy title, don’t you think? Me too. Yes, it is a 5 minute meal for most people. For me it was more like 25.  8 to get the water to boil. 5 to wash the little one’s hands, 5 to boil it up, 6 minutes to get some pictures and 1 minute to serve up. But- besides that- it was OMG good. Yes, you can find it in your grocers’ freezer. No, this post is not an ad. As cheesy as I am sounding right now.

and, in return- they feed me (sorta) I got a nice coupon for a free meal for two worth about $7.98. Sweet. Free food. So, I figure since it was so good I would tell you about it. Yes- it’s that good.

That’s the stuff.  It comes with sauce too.

Now because I am crazy enough to own 25lbs of flour, I made Focaccia to go with it. Yeah, carbs+carbs, heck, dinner was only going to take 5 minutes… I had time to kill.

mmm…Focaccia.

crispy-chewy on the outside….soft and fluffy on the inside, studded with olives and rosemary….

This was one of the easiest breads I made. True story.

The recipe came from Williams-Sonoma Baking cookbook.

Warning- it uses a lot of olive oil.

To make:

dissolve 2 pkgs active dry yeast  (5 tsp) in 1 1/2 c warm water and 1 tsp sugar

once dissolved, add 1/2 c extra virgin olive oil

add 5-c flour, 2 tsp salt and knead until smooth and elastic, about 5-7 minutes with a mixer and dough hook. You can add extra flour if needed.

Place in an oiled bowl, cover and let rise 1hr.

Place 1/4 c olive oil into a half sheet pan. (9x13x2″)

Punch down dough and place in pan. Poke down to make indentations and sprinkle with your choice of toppings-rosemary, olives,cheese, sun dried tomatoes, and kosher salt….

Bake at 450 for 20-30 minutes in the lower 3rd of your oven. Enjoy!

Now… what to make tonight. Hmmm….
