I submitted a version of this dish to “The Real Women of Philadelphia” recipe contest- $500 prize AND you don’t have to live in Philadelphia. Cause y’all know I DON’T live there. I live in Oz with the munchkins. You don’t believe me? Aw, man.

Speaking of munchkins. My hubby surprised me with 2 baby reeves turtles. I am thrilled. They are my favorite type of turtle. I used to have one that followed me around and ate cat food out of my cat’s dish. So, I spent some of yesterday setting up a woodland terrarium for the babies. They are a little bigger than a quarter. Today I am going to get some pics to share and we can watch them grow up together. 🙂
Ok, food: ooo- I should make some homemade “turtles” to celebrate.
Ok, enchiladas.

Oh yeah baby. This is what you should make tonight.
You know you want it…
Mmmm. Melted cheese. Can’t go wrong.
Take 2 cooked and shredded chicken breasts, 1 can (7oz) diced green chiles and 4oz cream cheese. Add 1 1/2 tsp cumin, 1 tsp garlic powder, 2-3 tablespoons Mexican seasoning Or/and salsa, 2-3 tbs diced pickled jalapenos and salt n pepper to taste.Heat until cheese melts. Fill 1 12″ flour tortilla with 2-3 tbs of mixture and roll up. Place in a baking dish seam side down.
Meanwhile….
In a food processor, place 1 1/2 c fresh cilantro, 1 c fresh parsley and pulse.
Add 1 c water or chicken broth. Put this mixture in the pan that held the chicken, and add 4oz cream cheese-stir to melt. Add 1/2 c half ans half, heat through over medium heat.
Spoon part of the sauce mixture over the tortillas, and top with shredded cheese. Bake at 350 for 25 minutes. Serve with extra sauce.
I love this recipe. It’s a keeper.
I love recipes that you can make without HAVING to go to the store . Keep tortillas in the freezer and some diced green chiles in the pantry and you’re set. That’s the ticket! 🙂
Anyway… I am working on some mango bread.A cousin to banana bread-just more tropical. I can’t step down the street without a giant mango falling from the sky and almost bonking me on the head. That’s my world.
What to do with the bounty? Mango bread. Yum. I have visitors coming soon and it will be nice to make some for them to have in their timeshare while they stay. Make it nice n tropical for them, ya know? I know it’s hot everywhere-at least I can take the heat and make it sound good. It is really hot tropical here. Hot & humid= tropical. Nice ring. Yeah!
