I have owed this to y’all! I know, I was supposed to post it last week~ I won’t bore you with excuses…. I really don’t have any good ones, anyway. WAIT!!! I doooo~ How bout this- ?
I had to do laundry. And dishes. And make oatmeal creme pies…… 🙂
Without further adieu, here it is:
I got the original recipe from all recipes here but I tweaked it- (as always) Here’s my tweaked version:
2 c rice
1/3 c onion finely chopped
1 1⁄2 c coconut milk
3/4 c chicken broth
1 tsp finely grated fresh ginger root
1⁄2 tsp garlic powder
2 tsp curry
Saute the onions until tender, add the remaining ingredients and bring to a boil. Boil for 2 minutes, reduce heat to a simmer (cover) and simmer for 17 minutes, or until rice is tender. Fluff with a fork and add 2 chopped scallions and 1⁄2 c chopped fresh cilantro. You can also sprinkle on some crushed red pepper, if you fancy that. 🙂
